Vegan RV Road Trip Cookbook
All of us wear many different "labels." Some of my labels include avid RVer and traveler, Oregonian, mother, wife, voice talent, writer and actor. Another one of my labels is head chef of my household. All of our labels intertwine to form the unique people that we are. And in this state of interlocking, many creative ideas and projects sprout forth.

One of my favorite pastimes is hanging out in the kitchen whipping up vegan culinary creations. However, I have to admit, I’m not one who is into using too many ingredients. I like recipes that are simple to make, yet taste delicious and are kind to the animals. Another plus about simple recipes is that they are easier to prepare in tiny kitchens—like the one in my motorhome. As we all know, most RV kitchens are limited on counter and storage space. So, packing my one-foot-wide pantry shelves with tons of boxes, cans, spices and other exotic ingredients is not an option.

I’m also a sucker for dishes that are great for bringing to RV potlucks—like creamy casseroles, zippy dips and delectable dessert cakes.

Recently, while perfecting the veganized version of my sister’s "Oops! I Made a Lasagna" recipe, I decided to gather a bunch of my favorite vegan recipes in one place and much to my surprise a cookbook was born. Vegan RV Road Trip: Simple Vegan Recipes for your RV Kitchen is a compilation of my favorite recipes to cook at home and while on the road.

Why a Vegan RV Cookbook?
Studies have shown that switching to more of a plant-based diet can drastically improve your health and even reverse the effects of many chronic health conditions. With that in mind, it's no wonder that more and more RVers are adding additional plant-based meals to their diets.
